Method
Cook Aviko Herb Diced Potatoes as per pack
To make salsa peel and dice red grapefruit removing any pith,
roughly chop avocado, slice down side of cob to remove corn
kernels, finely dice red onion, chop coriander leaves and chilli
then mix together all ingredients with salt and lime juice
To make Vegan Chipotle Mayo mix together mayo and chipotle
sauce
Warm tortillas in a dry frying pan
To prepare tacos add salsa to a tortilla then a few herb diced
potatoes then top with chipotle mayo
