Vegan Tacos with Aviko Herb Diced Potatoes


Whether you eat meat or not, you'll love these delicious tacos with a super fresh red grapefruit, avocado and corn salsa that will blow your mind!




2 for substantial meal, 4 for a lighter meal

20-25 minutes


  1. Cook Aviko Herb Diced Potatoes as per pack
  2. To make salsa peel and dice red grapefruit removing any pith, roughly chop avocado, slice down side of cob to remove corn kernels, finely dice red onion, chop coriander leaves and chilli then mix together all ingredients with salt and lime juice
  3. To make Vegan Chipotle Mayo mix together mayo and chipotle sauce
  4. Warm tortillas in a dry frying pan
  5. To prepare tacos add salsa to a tortilla then a few herb diced potatoes then top with chipotle mayo


(makes around 10 tacos)

  • Packet of Aviko Herb Diced Potatoes

  • 10 Small tortillas (choose corn for gluten free)

For salsa:


  • 1 Red grapefruit

  • 1 Avocado

  • 1 Corn cob

  • 1/2 Red onion

  • 1 Red chilli

  • Juice of 1 lime

  • 4 Tsp Fresh coriander

  • 1 Tsp Salt

For Vegan Chipotle Mayo:


  • 20ml Chipotle sauce

  • 100g Vegan mayo
