Vegan Burritos with Aviko Sweet Potato Fries

This quick, easy and healthy wrap are a perfect spicy treat for dinner or would go great in lunchboxes too.

Serves 2 as a main meal or 4 for a lunch or light snack

Method

  1. Cook Aviko Sweet Potato Fries as per pack
  2. To make guacamole mash avocados together with salt and other listed ingredients
  3. To make salsa chop tomatoes and mix together with listed ingredients
  4. Spread guacamole on a wrap then add other fillings and top with salsa, roll and slice in half to serve

Ingredients (makes 4)

  • Aviko Sweet Potato Fries
  • Packet of tortilla wraps
  • 100g Spinach
  • 100g Kidney beans
  • 100g Black beans
  • 1 Yellow pepper cut into strips
  • Spring Onions

For Guacamole:

  • 2 avocados
  • Half white onion finely diced
  • 2 red chillis chopped
  • Juice of a lime
  • Handful of coriander chopped

For salsa:

  • 150g tomatoes
  • Half red onion finely diced
  • Juice of half a lime
  • 1 green chilli chopped
  • Handful of coriander chopped
