Calling these Pad Thai dirty fries dirty seems wrong as they are so elegant to look at, and superb to eat. They are perfect for an indulgent treat when you want to try something different that you know will taste great.

Ingredients

  • Aviko Sweet Potato Fries
  • 150g Prawns
  • 100ml Fish sauce
  • 2 x Chopped fresh chilli
  • Thumb sized grated fresh ginger
  • 2 cloves of crushed garlic
  • Handful of coriander
  • Handful of crushed peanuts
  • Sriracha mayo

How to make Pad Thai Dirty Fries

Cook the Aviko Sweet Potato Fries as per the pack instructions and whilst they are cooking, do the following:

  • Crush garlic
  • Grate garlic
  • Slice chillies
  • Crush your nuts, the peanuts that is, we find the best way to do that is to add them in a sandwich bag and give them a whack with rolling pin
  • Chop your coriander

Then...

  • Stir fry fish sauce, prawns (allow to defrost beforehand if using frozen), garlic, ginger, and chilli together and ensure the prawns are cooked - check here for how long to cook your prawns for
  • Layer your sweet potato fries on the bottom of a serving dish and then liberally add your prawn mix on top.
  • Sprinkle peanuts and sriracha mayo (either buy ready made or mix mayo with sriracha sauce)
  • Finally sprinkle your chopped coriander.
