Description

1.Peel the butternut squash or pumpkin, remove the core and seeds with a spoon and chop into small cubes (slightly smaller than the herb diced potatoes)
2.Cut the salami or chorizo into small cubes
3. Heat a little oil in a large frying pan. Fry the herb diced potatoes and butternut squash over a medium for 10 minutes
4. Add the salami or chorizo, fry for a further 5 minutes
5. Finely chop the flat leaf parsley, use as a garnish

Tip

Ad some thinly sliced red pepper for even more colour and flavour
