1. Thinly slice the onion and finely chop the garlic. Heat the
oil in a pan and soften the onion for 5-10 minutes.
2. Fry the mince meat, breaking up the lumps with a wooden spoon,
then season with black pepper, Cajun Seasoning and Cayenne
pepper
3. Slice the pepper into thin strips and add these to the
pan
4. Add the kidney beans and sweetcorn
5. Prepare 1 pint of stock with the stockcube, stir in the tomato
puree and stock. Bring to the boil, then turn the heat down and
leave to simmer
6. Prepare the Aviko Sweet Potato Fries rib cut following the
instructions on pack
7. Serve the chilli con carne in bowls,garnish with coriander and
finely chopped chilli and serve with sweet potato fries
