Brunch Frittata Recipe

This delicious omelette is a great way to spruce up your Sunday brunch. This brunch frittata recipe is super easy to make and can be divided four ways for a perfectly chilled Sunday (or any other day for that matter).


  1. Halve cherry tomatoes and roast alongside Aviko Hash Brown Bites as per pack instructions.
  2. Fry bacon lardons and quartered mushrooms until browned and crisp.
  3. Whisk eggs, season with pepper and add cooked bacon and mushrooms to mixture.
  4. Add a little olive oil to a frying pan on medium head then pour egg mix in to pan.
  5. Cook for 3-4 minutes until frittata begins to form then top with Aviko Hash Brown Bites and cherry tomatoes.
  6. Finish frittata under grill for 1-2 minutes.
  7. Garnish with rocket leaves and serve.


  • Aviko Hash Brown Bites
  • 6 eggs
  • 250g chestnut mushrooms
  • 200g bacon lardons
  • 100g cherry tomatoes
  • Rocket leaves to serve
