Method
- Half aubergines and score skins, then roast skin side up for
around 30-40 mins
- Cook Aviko Sweet Potato Fries as per packet instructions
- Scoop out aubergines then mix together with tahini, garlic,
lemon juice and salt
- Slowly add olive oil and mix until creamy in consistency
- Sprinkle with sumac and pine nuts (optional)
- Top with more olive oil
- Serve with Aviko Sweet Potato Fries, cucumber sticks and
toasted pitta breads

- Juice of a lemon
- 20ml Extra virgin olive oil
- Salt
