Babaganoush with Aviko Sweet Potato Fries

Method

  1. Half aubergines and score skins, then roast skin side up for around 30-40 mins
  2. Cook Aviko Sweet Potato Fries as per packet instructions
  3. Scoop out aubergines then mix together with tahini, garlic, lemon juice and salt
  4. Slowly add olive oil and mix until creamy in consistency
  5. Sprinkle with sumac and pine nuts (optional)
  6. Top with more olive oil
  7. Serve with Aviko Sweet Potato Fries, cucumber sticks and toasted pitta breads

Ingredients

  • 2/3 Aubergines
  • 30g Tahini
  • 4 Cloves crushed garlic
  • Juice of a lemon
  • 20ml Extra virgin olive oil
  • Salt

To serve

  • Sumac and pine nuts (optional)
  • Aviko Sweet Potato Fries
  • Cucumber
  • Pitta breads
