Ingredients

  • 500g Aviko Herb Diced Potatoes (1 bag)
  • 400g Cooking Spinach (1 bag)
  • 2 onion, finely chopped
  • 2-3 tomatoes, chopped
  • 1-2 green chillies
  • 3 tbsp ginger & garlic paste
  • 2 cloves
  • 1 cinnamon stick
  • 1 bayleaf
  • 1/2 tsp ground tumeric
  • 4 tsp garam masala
  • 8 tsp cornflour
  • 4 cups of water

Description

1. Oven cook the Aviko Herb Diced Potatoes, following the instructions on the packaging
2. Blanch the spinach quickly and refresh
3. Squeeze the water out of the spinach
4. Blend the spinach with the chillies until smooth
5. Heat the oil in a frying pan; fry the bay leaf, cloves and cinnamon until aromic.
6. Add the onion, fry until light brown, then add the garlic and ginger paste (fry until the raw aroma goes away)
7. Add the tomatoes and fry until soft and mushy. Add tumeric, stir well for 5-10 seconds, then add the spinach mixture
8. Add cornflour and stir thoroughly until smooth
9. Pour in the water and season with salt
10. Simmer until completely cooked & thickened
11. Add the Aviko Herb Diced Potatoes, simmer for 2-3 minutes
12. Sprinke with garam masala, again; simmer for 2 minutes

Tip

Serve with Poppadom, Naan bread and Chutney
